Ingredients
2 eggs
1/4 avocado, diced
1/4 cup cherry tomatoes, halved
1/4 cup cucumber, diced
1/4 cup cooked bacon, crumbled
1 tbsp olive oil
Salt and pepper, to taste
Preparation
In a bowl, whisk the eggs until light and fluffy. Season with salt and pepper.
Heat a non-stick pan over medium heat and add olive oil. Pour the eggs into the pan and scramble until cooked to your desired consistency.
