About the Recipe

You can use other white fish fillets like cod or tilapia for this recipe. Just adjust the cooking time according to the thickness of the fillets.

Ingredients

  • 4 halibut fillets (6 oz each)

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup almond flour

  • 1/4 cup chopped fresh parsley

  • 2 garlic cloves, minced

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 2 tbsp olive oil

Preparation

  1. Preheat the oven to 375°F.

  2. In a mixing bowl, combine grated Parmesan cheese, almond flour, chopped parsley, minced garlic, salt, and black pepper. Mix well.

  3. Pat the halibut fillets dry with a paper towel.

  4. Coat the fillets with the Parmesan mixture on both sides.

  5. Heat a skillet over medium-high heat. Add olive oil and swirl to coat the bottom of the skillet.

  6. Sear the halibut fillets for 2-3 minutes on each side, until they are golden brown.

  7. Transfer the fillets to a baking sheet lined with parchment paper.

  8. Bake in the preheated oven for 8-10 minutes, until the fish is cooked through and the crust is golden brown.

  9. Serve the Parmesan crusted baked halibut hot with a side salad or steamed vegetables.
