This keto chicken caesar salad is a classic lunch option that is easy to make and full of flavor. It's perfect for those who love a good salad and want something filling and satisfying.
Ingredients
1 lb boneless, skinless chicken breasts
2 tbsp olive oil
1 tsp garlic powder
Salt and pepper to taste
2 heads romaine lettuce, chopped
1/4 cup grated Parmesan cheese
1/4 cup Caesar dressing (look for a keto-friendly brand)
1/4 cup almond flour
1/4 cup grated Parmesan cheese
1 egg
2 tbsp olive oil
Preparation
Preheat oven to 400°F.
Season chicken breasts with olive oil, garlic powder, salt, and pepper. Bake for 20-25 minutes or until cooked through.
While chicken is cooking, prepare the salad by combining chopped romaine lettuce, grated Parmesan cheese, and Caesar dressing in a large bowl.
In a separate bowl, combine almond flour and grated Parmesan cheese. Beat the egg in another bowl.
Cut the cooked chicken into strips. Dip each strip in the egg mixture, then coat in the almond flour mixture.
Heat olive oil in a skillet over medium heat. Cook chicken strips until crispy and golden brown, about 3-4 minutes per side.
Top the salad with the crispy chicken strips and serve.
