Ingredients

For the salad:

  • 1 lb ground beef

  • 2 tbsp olive oil

  • 1 tsp chili powder

  • 1 tsp ground cumin

  • Salt and pepper to taste

  • 4 cups shredded lettuce

  • 1 small red onion, diced

  • 1 small red bell pepper, diced

  • 1 small yellow bell pepper, diced

  • 1 cup cherry tomatoes, halved

  • 1 avocado, diced

  • 1/4 cup chopped fresh cilantroFor the dressing:

  • 1/4 cup sour cream

  • 2 tbsp lime juice

  • 1 tbsp chopped fresh cilantro

  • Salt and pepper to taste

For the dressing:

  • 1/4 cup sour cream

  • 2 tbsp lime juice

  • 1 tbsp chopped fresh cilantro

Preparation

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up into small pieces with a wooden spoon, about 5-7 minutes.

  2. Add chili powder, ground cumin, salt, and pepper to the skillet. Stir to combine and cook for an additional 2-3 minutes.

  3. In a small bowl, whisk together sour cream, lime juice, cilantro, salt, and pepper. Set aside.

  4. In a large salad bowl, combine shredded lettuce, diced red onion, diced red and yellow bell peppers, cherry tomatoes, diced avocado, and chopped cilantro.

  5. Add the cooked ground beef to the salad bowl and toss everything together.

  6. Drizzle the dressing over the salad and toss again to coat.

  7. Serve immediately and enjoy!
