Burrito bowls are a great way to satisfy your Mexican food cravings while keeping it keto-friendly. This Keto Burrito Bowl recipe is packed with protein, healthy fats, and fiber. It's also easy to customize with your favorite veggies and toppings, making it a great option for meal prep or a quick and easy dinner.
Ingredients
1 lb ground beef or turkey
1 tbsp olive oil
1 red bell pepper, diced
1 green bell pepper, diced
1 small onion, diced
2 cloves garlic, minced
1 tbsp chili powder
1 tsp cumin
1/2 tsp smoked paprika
Salt and pepper to taste
1/2 cup shredded cheddar cheese
1/4 cup chopped fresh cilantro
1 avocado, sliced
Salsa, for serving
Preparation
In a large skillet over medium heat, add olive oil and sauté the diced onion and minced garlic until fragrant, about 2-3 minutes.
Add the ground beef or turkey to the skillet and cook until browned, about 5-7 minutes.
Add the diced bell peppers, chili powder, cumin, smoked paprika, salt, and pepper to the skillet. Cook until the peppers are tender, about 5-7 minutes.
While the meat is cooking, prepare the cauliflower rice. In a separate skillet, heat 2 tbsp olive oil over medium heat. Add the riced cauliflower, cumin, garlic powder, and salt, and stir to combine. Cook for 5-7 minutes or until the cauliflower is tender.
To assemble the burrito bowls, divide the cauliflower rice evenly between four bowls.
Top the cauliflower rice with the cooked ground beef or turkey mixture.
Sprinkle shredded cheddar cheese over the top of each bowl.
Add sliced avocado and chopped cilantro to each bowl.
Serve with salsa on the side.
