Vegan Breakfast Tacos


Ingredients:


One tablespoon of olive oil

1/2 onion, diced

One bell pepper, diced

1 cup firm tofu, crumbled

1/2 teaspoon ground turmeric

1/2 teaspoon ground cumin

1/4 teaspoon smoked paprika

Salt and pepper, to taste

4-6 small tortillas (corn or flour)

Toppings: Sliced avocado, salsa, fresh cilantro, vegan cheese, etc.


Instructions:


Heat olive oil in a skillet over medium heat.


Add diced onion and bell pepper. Sauté until softened and slightly caramelized.

Add crumbled tofu, turmeric, cumin, smoked paprika, salt, and pepper to the skillet. Stir well to combine and evenly distribute the spices.


Cook for 5-7 minutes, stirring occasionally, until the tofu is heated and lightly browned.


Warm the tortillas in a separate skillet or over an open flame.

Spoon the tofu mixture onto the tortillas, distributing it evenly.

Top with your favorite toppings, such as sliced avocado, salsa, fresh cilantro, or vegan cheese.
