These crispy and savory zucchini fritters are a delicious keto snack or appetizer.

Ingredients
2 medium zucchini, grated
1/4 cup almond flour
1/4 cup grated Parmesan cheese
1 egg, beaten
1/4 tsp garlic powder
Salt and pepper to taste
Olive oil for frying
Preparation
Place the grated zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture.
Squeeze the grated zucchini to remove as much liquid as possible.
In a bowl, mix together the zucchini, almond flour, grated Parmesan cheese, beaten egg, garlic powder, salt, and pepper.
Heat a thin layer of olive oil in a non-stick skillet over medium heat.
Using a spoon, scoop the zucchini mixture and form it into small patties.
Place the patties in the skillet and cook for 3-4 minutes on each side, until golden brown and crispy.
Repeat until all the mixture has been used.
Serve the zucchini fritters hot, garnished with some fresh herbs or a dollop of sour cream or Greek yogurt, if desired.
